Chef/Co-Founder Tom Kaldy

Chef Tom Kaldy is an award-winning culinary professional with over 20 years of experience in high-end & Michelin rated kitchens and hospitality ventures. He spent years running and opening some of the top restaurants in CT such as The Charles, Cavey's French & Italian Restaurants, Artisan at the Delamar, Vinted Wine Bar, and now The Hidden Kitchen.

As the founder of Food For Thought CT and half of the creative force behind The Hidden Kitchen at Hilliard Mills, he brings a chef-driven approach to simple, wholesome food that, he feels, truly hits the spot.

After years in fine dining, Chef Kaldy shifted his focus toward building something more meaningful—combining technique, creativity, and community into an experience that is both approachable and deeply intentional. His work emphasizes conscientious cooking, seasonal ingredients, and a commitment to supporting local producers whenever possible.

Through evolving menus, immersive cooking classes, and community-driven initiatives, his mission is simple: to create food and experiences that nourish, connect, and inspire.

Chef/Co-Founder Joe Keane

Chef Joe Keane is a highly seasoned culinary professional whose career has been shaped by experience in some of Connecticut’s most respected kitchens, including Peppercorn’s Grill, Grant’s Restaurant, Bricco Trattoria, and Sorella. These roles helped him refine his technique and develop a strong foundation in proper Italian cuisine.

He later expanded his expertise in the catering and events world, working alongside Richard Kenworthy of Catering by Kenworthy and Tony Shandra of A Catered Affair, where he developed a deep appreciation for precision, execution, and detail-driven hospitality.

Joe began his journey at just 16, immersing himself fully in the industry and learning every aspect of the craft from the ground up. Today, as a partner at Food For Thought CT and The Hidden Kitchen at Hilliard Mills, he brings a disciplined, thoughtful approach to creating seamless, meaningful guest experiences.
